From Wiki: Za'atar is generally prepared using ground dried thyme, oregano, marjoram, or some combination thereof, mixed with toasted sesame seeds, and salt. Some varieties may add savory, cumin, coriander or fennel seed. A Lebanese variety of Za'atar usually contains sumac berries, and has a distinct dark red color.
Other marinate is with coconut milk, ginger and lemon - gives it a Thai twist. Honey and grain mustard marinade is another favorite of mine. Again, grill both.
Marinade for at least a couple of hours - or even overnight to get the chicken really fired up with flavour!

(Works good for other fish as well. Just pick one you like and spice it with what you love)
I would use olive oil, lemon or lime (fresh squeezed), fresh garlic and dill. No salt, no pepper, no breading. The fish tasted great.
Set it on the heated grill and cook until the fish was firm.
Nothing better than fresh ingredients to make the meat taste great.
I have done the same with chicken breasts. I had cast iron grill grates.. so nothing stuck
I have grilled with just a little olive oil ~ asparagus, green beans, peppers, squash..
If you don't grill them.. try using a fry pan. I add garlic when I do the veggies inside.
Cooking healthy isn't hard, you just need to rethink your food options.

Even if you eat at home 95% of the time... its hard to get away with not eating processed foods..its in your milk, cheese and even pre-prepared meals that you bake or microwave. Back on the Tomatoes that you buy in the store... those.. unless posted are picked green and then gased to ripen them, sure they look Great but they have no flavor..Eating a Big Breakast "Rocks"
missing lunch and no snacking during the day I hink is Ok IMHO..then eating a healthly Dinner early in the evening is possibly a good way to live...again.IMHO.
