This article in the WSJ supports my feelings concerning gluten, especially in the form of bleached white flour and the possible adverse sffects of glutens upon all of us. My 'spawn' [aka TxAggieDiver] has celiac's, the most extreme form gluten intolerance. She must avoid gluten at all cost, otherwise it causes immediate deteriation of the small intestine. Her shopping routine now includes reading, and interpreting ingedients of every food she buys, not to mention the inquiries she must make of restaurant personnel to determine if a certain dish is 'gluten free'. Fortunately, many food manufacturers are including clear labelling concerning the gluten content, or lack thereof of their products. Celiacs is a disease of, mainly, people of European descent, and can be transmitted genetically, but may remain dormant for years. As the Wikipedia article states, testing indicates others may suffer many different symptoms from gluten sensitivity. Personally, I have noticed a some abdominal bloating after ingesting anything made from bleached white flour, and therefore try to exclude it from my diet. I had my blood tested for celiacs, after 'Spawn' was diagnosed, it was negative. Some argue, that alterations to the wheat grain [to increase protein] grown in the US is responsible for the increasing gluten sensitivity.

That's my 2 psi, hopefully 'Spawn' will contribute some of her knowledge.
