I was having a conversation with TF last night and it gave me an idea. We are now entering the holiday season...entertaining, eating, drinking, and enjoying the company of our friends and family. Some of you are even meeting in Dallas to wing in the Nude Year. With respect to the eating and drinking, do you have a recipe that you'd like to share with the rest of us? Something really good? Your favorite?

The only rule on this thread is NO fruit cake recipes. My thread, my rules. Fruit cakes are disgusting. So there.

I'll start with a libation. I know this will sound like an odd (borderline gross) combination of ingredients, but I have NEVER made it and had anybody say they didn't like them...

Dominican Nun

1 part (12 oz) Frozen Minute Maid Lime Concentrate
1 part (12 oz) Southern Comfort
2 parts (uh, two cans) beer!!

Mix it up and serve over ice...umbrella optional. I dare the Dallas party to mix up a batch and post an e-pinion here. Actually, I double dog dare you!!!!

OK, I'm not feeling any immediate thread love so I am going to try something for the land lubbers...

Pork Tenderloin

1/2 c. Soy Sauce
1/2 c. Dry Sherry
2 cloves minced garlic
1 T dry mustard
1 t. dry ginger
1 t. thyme
Tenderloin

Combine all ingredients and marinate tenderloin 1 hour. Best if allowed to marinate overnight. Bake at 350 for 45 minutes.

This is really good. Trust me.

I'll play along FNG....here's one of my favorites....one of the moistest cakes EVER...but not for anyone on low-fat or low-carb diet!

7-Up Cake

3 sticks unsalted butter, softened
3 cups sugar
2 TB lemon extract or lemon juice
5 eggs
3 cups flour
1 cup 7-Up

Preheat oven to 350°F. Cream butter and sugar together. Add eggs one at a time, beating after each addition. Then alternately add flour and 7-Up, a little bit at a time. Beat in lemon extract. Bake in a ring-shaped (bundt) cake pan for 1 hour and 20 minutes.

i'll bite (and frequently do)....

TRIGGER'S SPICY BUTTERNUT SQUASH SOUP:*
*(not trigger's spicy butt)

Ingredients: Spices:


2-3 tbsp olive oil ¼ tsp cinnamon
4 c. butternut squash ¼ tsp cumin
1 little new potato, ¼ tsp chili powder
1 c. baby carrots ¼ tsp white pepper
1 med. onion, ¼ tsp chipotle powder
2 c. vegetable broth ½ tsp paprika
½ c. heavy cream 1 small dried chipotle pepper
(smoosh onion, potato and carrots 1 tsp salt
in a food processor so they’re
really minced)


PREPARATION:
Cube squash. ( You can season the squash with the spices and bake , or fry spices in oil later). Whatever. bake squash in 400 deg oven til soft. or cook it down in the pan. again, whatever.

heat oil in pan; add all spices except the whole chipotle. Fry til they get darker. Add garlic; sauté a bit; then add veggie mix and cook down. Can add 2 tbsp butter if it looks dry.

Mush up squash and add to pan; stir. Let cook about 5 minutes.
Add broth and simmer for 10 minutes.

Pour mixture into blender and puree til smooth (it’s ok if there are little veggie pieces).
Put back in pot; add heavy cream a little at a time and stir well; add more butter to taste. If too thick, add a little water. Drop in whole chipotle and let soup simmer uncovered for 10 minutes. Stir occasionally.

Allow college-aged son to scald mouth while tasting soup. When he recovers, ask if the soup needs more kick and add chipotle powder to taste.

What would the holiday be without eggnog!!

1/2 cup rum
2 cups light cream (chilled)
6 cups heavy cream
nutmeg
cinamon

Crack and seperate 18 eggs. Beat egg yolks until light, slowly add sugar.
Continue to beat until thick and light in color. Slowly add the bourbon and
rum while continuing to beat the mixture. Add light cream. After the light cream has
been fully incororated, set the mixture aside.
Whip heavy cream until peaks form. Temper the egg yolk mixture with a few large
spoon fulls of the whipped heavy cream, then fold yolk mixture into whipped heavy cream.
Beat egg whites until stiff peaks form and fold into eggnog. Sprinkle nutmeg and cinamon
to taste.

Here's one of my favs.............

Peanut Butter Balls

1 jar peanut butter - creamy
2 teaspoons of vanilla
1 stick of margarin
1 lb bag of powdered sugar
pinch of salt
bag of chocolate chips (semi-sweet)
2" block of parafin WAX (thank you Flatwood) :P

mix peanut butter, margarine, vanilla, salt and 1/3 bag of powdered sugar - blend with electric mixer - add more powdered sugar as you go to get the mixture to a consistency where you can roll it into balls without sticking to your hands.

roll one inch diameter balls and place them on a dish - adding more powdered sugar as you go - you end up using about 3/4 of the bag - you can put some directly in your hands to make the ball rolling easier.

melt block of wax in double boiler on high heat, it must be completely melted, then add the bag of chocolate chips - turn heat down to low/medium and stir until chocolate becomes smooth.

place peanut butter balls in melted chocolate and use tow spoons to coat/roll it in the chocolate - place on tray lined with wax paper - put them in the frig to chill for a couple of hours - serve chilled as they soften as they sit out -

Well, I just drank a fifth of sake to steel myself in an effort to finally write my 1,000th post (which is this one). I'm getting into the holiday spirit for the visit from Tokyo of the person I hope will become my long-term dive buddy, Xiaoyan.

My preference re: holiday meals is simply to make reservations. However, as a starving marine ecologist I actually have to cook on occasion (like every day, dammit).

My favorite cuise? My Thai green curry. OK, so it may not be a Christmas or New Year's dish, but at least when I make it people seem to like it. Can't say the same for my broccoli and cheese stuffed market squid.

The recipe:

1 can coconut milk
1 chicken boullion cube
1/2 cup water
1 tsp Thai Gardens green curry paste
3 tbls Thai Gardens fish sauce
2 tbls brown sugar

then add your combination of veggies and protein. I like shrimp, broccoli and cauliflower; or beef, Chinese peas and water chestnuts; or chicken and Oriental vegetable mix.

Whew... now that I've hit post #1,000 I can sleep soundly (yes, the sake may help a bit although I find I can drink a full fifth of it and just get a mild buzz).

Throw this on the grill over indirect heat until it reaches 160F (about 1 hour for 2lbs.) and it is amazingly good.
