And just to balance out all the healthy stuff, a big bowl of high quality ice cream is required once and a while. It promotes 'mental health'.

Here's my recipe.
In a blender combine;
1 - banana, sliced
1 - packet [100g] Sambazon Acai
Frozen fruit:
5-6 strawberries
1/2C - pineapple or cantalope when in season
1/3C - raspberries
1/3C - blackberries
1/3C - blueberries
1-1/2 tsp - cinnamon powder
1 tbs - powered cocoa
1 tbs - Flax oil
1/3C - pomegranet juice
1/3C - white grape juice
1/2C - low fat organic yogurt
Blend until smooth, makes about a quart, can be frozen
Be careful if you drink the whole quart, the combination of all the fruit and flax oil will have your digestive tract rumbling.
About Acai - it's a South American palmberry high in Omegas -6 [429mg] and -9 [1785mg] and also higher in antioxidants than blueberries. Availability is limited to health food stores/vitamin shops. Whole Foods, in my area carries it, but I use so much of it, I order it by the case from Sambazon.
I've also been known to mix in rum for a little kick.

It was dark brown with darker spots throughout, and was round (about 3inches diameter) and LOOKED just like bread or a cake! However, it tasted like sausage... Very odd and very worrisome when bread tastes like sausage...

I can't eat the instant or the quick version. I prefer the whole oat style.
I usually eat it plain (no milk or sugar) at my desk at work.
Healthy snacks... I like smoked salmon, dried cranberries, apples, bananas
Love Hummus... with lots of garlic.. or olives.. I will eat it on carrots or celery.
I think I will have to pick some up for this weekend.

I totally agree.I am also an oatmeal lover but the instant/fast cooking stuff is awful. It's like comparing minute rice to basmati or jasmine rice. Just can't be done.

I have a Magic Bullet and make fruit smoothies all the time. Mostly just fruit and ice because it is sweet enough( have the strawberries not been awesome this year?), if I am feeling dirty, some vanilla ice cream, and some Capt' Morgan...

As I've had great success with Atkins, where the only restriction is carb intake, I'll offer several of my faves:
8 oz plain whole milk yogurt
1 tsp vanilla extract
2 packets of Splenda
6.35 net grams of carbs!
8 oz plain whole milk yogurt (by the way, I make my own yogurt and it's FABulous!)
1 Tbsp instant coffee
4 packets of Splenda
8.93 net grams of carbs
4 Tbsp natural peanut butter
2 lg ribs of celery
9.9 net grams of carbs
1 C jicama slices
1/4 C pesto
8.68 net grams of carbs
1 C pecan halves
4.22 net grams of carbs
And for the sweet tooth....
3 oz cream cheese
1 Tbsp Hershey's Special Dark cocoa powder
4 packets of Splenda
Mash it all together (helps to nuke the cream cheese a little to soften it)
Voila! Fudge!
8.64 net grams of carbs!

Eggs,bacon and toast usally mine & healthy glass of OJ.Also as a good practice to drink plenty of H2O.

I have recently discovered Irish Oats, also called Steel Cut Oats. This is what oatmeal is is before it is processed and all the good is taken out. I got to where I could not eat oatmeal anymore so I tried this stuff. It takes a long time to prepare and but it is a completely different experience. It is not gummy at all and has a ton of taste to it. I have even had it for supper twice in the last week.
I'm a big fan of Steel Cut oats too. My favorite recipe is below. You cook it on high in a crock pot for two hours. It keeps very well in the fridge and you just nuke it to warm it when you want it. (keeps for 1 week). Enjoy!!
1 cup Steel cut oats
1 large apple, chopped (I prefer peeled, but that's your choice)
1/2 cup(s) Craisins Dried Cranberries
1 tsp ground cinnamon
1 tsp vanilla extract
4 cups water
Optional if you can find it....
1/2 cup Red River cereal dry and add an additional 2 cups water with this.
Combine in a crock pot. Cook on high for 2 hours.
*you could probably do this stove top too, but I've not tried it. The apples stay in chunks in the crock pot.
Yummy with or without a little brown sugar or maple syrup!

Here's a good hummus recipe - very easy to make if you have a food processor. The texture comes out a bit different then store bought but the flavor is much better.
Spicy Sweet Roasted Red Pepper Hummus
1 15oz can of garbanzo beans, drained
4 oz. roasted red peppers
3 tablespoons lemon juice
1&1/2 tablespoons tahini
1 clove garlic, minced
1/2 teaspoon cumin
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
parsley for garnish (optional)
Blend / puree all ingredients (except parsley) until the mixture is smooth and slightly fluffy. Refrigerate for at least an hour before serving.
