But I too have now voted for spinach to come back. And Bill is right...by simply substituting spinach for lettuce in salads, or on a sandwich you have now boosted the nutritional value of your meal by a huge magnitude including:
A half cup of spinach 15g (about the amount in a salad or on a veggie sandwich) provides roughly 25 IU of beta-carotene, 27% of Vit A, 2 grams of fiber, 5 calories, 14% Vit C, 1.5% calcium, 300% of Vit K, 8% of Vit E, 32% Vit B9 and 3.3% iron.
And if you think that adding a half of cup of spinach to your diet weekly is not worth the effort you can prevent macular degeneration by simply adding a half cup of spinach to your diet a week. Vit E is the primary preventor of macular degeneration and as little as 8% of the US RDA for Vit E is found in spinach and will prevent it. However 100% in a vit supplement will not.
So get your vitamins and nutrients from FOOD!

I offer you a link to voice your opinion at Subway Restaurants. They are trying to decide if spinach should be back on the menu. I for one prefer the Veggie sandwich and it is not the same in taste or nutrition without the spinach. Please take a few moments to voice your opinion. Thanks,

I have been in serious spinach withdrawal. As one of only two green foods I can get excited about, it has been missed.
