Seafood Dressing:
1 - 2 pkg of pepperidge farm seasoned dressing
3 stalks of celery - Chopped
1 small Onion - Chopped or you can substutite 4 green onions
3 garlic Cloves - chopped
1 stick of butter - melted
1 can of Chicken Broth (if you have freshly made that's even better)
1 container of fresh Oysters - Drained and Chopped
1 small container of fresh Crab Meat - Chopped
1/2 lb of shrimp - chopped
1 large Red Apple - Chopped and leave the skin on or try 3/4 cup of fresh cranberries
1 small package of coarsely chopped Walnuts or Pecans - your choice
Salt and pepper
1 Tbsp of Poultry Seasoning
1 Tsp of Sage
Mix all ingredients together and stuff into the cavity of Turkey then cover that area with Tin Foil while baking so not to burn.
If not cooking in a Turkey, place into a casserole dish and bake at 325 for 30-45 minutes or until you can see crab meat and shrimp pieces pink.

1 can cream-style corn
1 can whole grain corn (not drained)
1 pkg Jiffy corn muffin mix (8 or 9 oz.)
1 stick butter or oleo (melted)
2 eggs
1/2 cup milk
1 cup shredded cheddar cheese (optional)
Mix corn, eggs, milk, and corn muffin mix. Add butter and mix all together.
Put in greased casserole dish and bake 40-50 minutes at 350 degrees. Take out of oven and sprinkle cheese on top, if desired, and put back into oven until cheese melts.

3 lbs. small red potatoes, unpeeled
4 shallots, peeled
1/2 cup unsalted butter, melted
1/2 cup chopped parsley
3/4 tsp. salt
1/8 tsp. black pepper, freshly and finely ground
1/3 cup olive oil
3 cloves garlic, peeled
Early in the day, parboil the potatoes until just tender, and refrigerate.
Melt butter. Place salt, olive oil, garlic, shallots, parsley, and pepper in the bowl of a food processor, and blend until thoroughly combined, using a steel S-blade. Pour into another container and stir in melted butter.
Cut the potatoes into quarters and place on a 9 x 13-inch pan. Add the goop, mixing the potatoes with your hands, and spread the potatoes out in the pan in a single layer. They should be covered with goop on all sides. Bake at 350 degrees for 2 hours, until crispy. Stir periodically.

Sausage Balls
3 cups Bisquick baking mix
1lb. sausage, regular or spicy, at room temperature
1lb. sharp cheddar cheese, grated, at room temperature
Mix all ingredients together in a large bowl, kneading until combined well. You really have to work it, but you can take your frustrations out here. It's therapeutic. Really, it is, trust me. Roll into 1" balls and freeze until ready to bake.
Yield: about 5-6 dozen.
Bake as needed. 300 degrees for 25 minutes. Best served HOT, ask WW.

Christmas Cookies
1 cup water
1 tsp baking soda
1 cup sugar
1 tsp salt
1 cup of brown sugar lemon juice
4 large eggs
1 cup nuts
2 cups dried fruit
1 bottle Jose Cuervo Tequila
Sample the Cuervo to check quality. Take a large bowl, check the
Cuervo
again, to be sure it is of the highest quality. Pour one level cup and
drink. Turn on the electric mixer. Beat one cup of butter in a large
fluffy bowl.
Add one teaspon of sugar. Beat again. At this point it's best to make
sure the Cuervo is still OK. Try another cup...just in case. Turn off
the mixerer thingy. Break 2 leggs and add to the bowl and chuck in the
cup of dried fruit. Pick the frigging fruit off the floor. Mix on the
turner. If the fried druit gets stuck in the beaterers just pry it
loose
with a drewscriver. Sample the Cuervo to check for tonsisticity.
Next, sift two cups of salt or something. Who gives a @!&%. Check
the Jose Cuervo. Now shift the lemon juice and strain your nuts. Add
one
table. Add a spoon of sugar, or somefink. Whatever you can find.
Greash the oven.
Turn the cake tin 360 degrees and try not to fall over. Don't forget
to
beat off the turner. Finally, throw the bowl through the window.
Finish
the Jose Cuervo and make sure to put the stove in the dishwasher.
