Only issue - I didn't know what you wanted to do wrt to Payments.  90 days out is 4/22/21... but since the trip is opening so close to when it starts, if you would to use payments I recommend:

 

Diver/DO

Deposit - $600

Payment Due 5/22/21 - $597 (the balance)

 

Diver Only - pay in full at the time of booking (~$600)

Since you don't have any of the S/O options priced, I created the SKU, but did not "publish it" so no one will try to book.  If you should have someone want S/O the SKUs are created (both front and backend) but the pricing will need to be updated and then published.
